Nothing like baking bread in the ov...well actually we use a bread machine but the smell is still great and it tastes great too! I've tweaked this recipe several times and I think it's a keeper. Only 2.4 tiny net carbs per slice. Great toasted with butter, even better made into garlic cheese bread. You can even toast it up, grind it in a food processor and use it in any recipe calling for bread crumbs (like my meatloaf recipe, coming soon).
Yield:
2 pound loaf
1 cup warm water
2 eggs beaten
3 tablespoon butter melted
4 tablespoons Splenda sugar substitute
2 teaspoons salt
2/3 cup ground flax seeds
1/2 cup soy flour
1 - 6 1/2 oz box vital wheat gluten flour
1 - .25 oz packet of active dried yeast
Directions:
Add ingredients in order listed. Select 'light' crust setting and 2 pound loaf. Don't slice bread until it is cooled. Cut into about 20 slices, and store covered in the refrigerator.
